Ingredients
6 med. sweet potatoes 1/2 tsp grated orange peel
1/4 cup brown sugar firmly packed 1 cup apple chopped
1/2 cup butter 1/4 cup pecans chopped
Bake sweet potatoes until tender. Cut lengthwise, scoop out filling. Leave
shells aside. Mix potatoes and all ingredients except apples and pecans
in a bowl. Beat at medium speed until lumps are gone. By hand, stir in
apples and pecans. Refill shells with mixture. Bake for 15 to 20 minutes
at 375 degrees.
