About the Recipe
Ingredients
3 eggs 1 tsp cinnamon
2/3 cup pumpkin 3/4 cup flour
1 cup sugar 1 tsp salt
1 tsp baking soda chopped walnuts (optional)
Mix all ingredients together. Lightly grease a cookie sheet then line with
wax paper (15 1/2x10 1/4x 3/4). Pour mix on top & smooth out evenly.
(sprinkle walnuts on top if using). Bake for approximately 15 minutes @375°.
Sprinkle clean towel ( kitchen towel size) with granulated sugar. Turn cake upside
down on towel & remove wax paper. Sprinkle inside of cake with more sugar
(optional) then roll up & let cool. Unroll cake & spread filling evenly. Re-roll & place
in freezer ( easier to cut) until ready to serve. May refrigerate instead, depends on
consistency preference.

8 oz cream cheese 2 T margarine
3/4 tsp vanilla 1 cup powdered sugar
