About the Recipe

Ingredients

4 lg. eggs Confectioner's sugar to dust on

2 T. whole milk bread

2 tsp. superfine (caster) sugar 1/4 tsp. ground cinnamon

1 tsp. vanilla extract 1/2 tsp. mixed ground spice

2 T. unsalted butter, plus extra Maple syrup (optional)

to serve Fruit (optional)

4 slices of white bread or brioche


Place the eggs, milk, sugar and vanilla extract in a shallow bowl and mix

together. Melt the butter in a non stick skillet. Dip each slice of bread into the

egg mixture on both sides then put them in the skillet for 2-3 minutes or until

brown. Turn over and cook for an additional 2 minutes. Butter toast if desired

and serve hot with a dusting of confectioner 's sugar and a drizle of maple

syrup..
