Ingredients
1 onion diced 1 can cream corn
1 bell peppper diced (i sometimes 1pkg Jiffy Corn Muffin Mix
use frozen red, yellow, green 3 eggs
bell pepper mixture) 1/2 tsp sugar
1 stick butter
1 can whole kernal corn Undrained
Saute the onion & peppper in butter. Add cans of corn, Jiffy Muffin Mix, eggs,
sugar, salt & pepper. Mix well and pour into a greased casserole dish
Topping
8 oz. sour cream Dash of salt amd pepper
1 c. shredded cheddar cheese
In another bowl, prepare a topping of 8 ozsour cream, 1 cup shredded cheddar cheese
and a dash of salt & pepper. dollop and spread over top of corn mixture, Bake at 350
fr 1 to 11/2 hour until set.
