Ingredients
3 to 4 cups seasoned cooked 32 oz Mexican blend cheese
chicken breast 2 T garlic powder (or to taste)
3 doz corn tortillas Toothpicks
1 lg head lettuce (iceberg) Vegetable oil
Shred chicken breast and set aside. Chop lettuce fine, toss with garlic
powder and cheese, mix well. Warm corn tortillas, a dozen at a time in
microwave for 1 to 1 1/2 minutes (depending on microwave). Begin filling
tortillas with chicken and lettuce mixture. Roll and secure with toothpicks
and place on cookie sheet. Heat oil piping hot, then drop tacos. Fry for 2
minutes or until golden brown, Place on another cookie sheet lined with
paper towels to drain excess oil, Serve with Salsa for dipping.
