About the Recipe
Ingredients
2 cups all purpose flour 1/2 tsp salt
1/3 cup brown sugar, packed 1 1/4 cup peeled, chopped apple
1/3 cup pure cane sugar 1 egg, beaten
1 1/2 tsp baking powder 1 cup milk, room temperature
1 1/2 tsp baking soda 3 T butter, melted
1 tsp. cinnamon
In a large bowl, use a whisk or fork to combine the flour, brown sugar,
cane sugar, baking powder, baking soda, cinnamon and salt, until well
mixed. In another bowl, combine the beaten egg, the milk and the
melted butter. Stir in the chopped apples. Add the wet ingredients to
the flour mixture, using a wooden spoon, and gently stir, just until
combined, do not over-mix. Spoon the muffin batter into lightly greased
or paper lined muffin cups, filling almost to the top. Bake at 400° for
about 15 minutes, or until golden and muffin tops are firm to the touch.
