About the Recipe


1 1/2 cup slightly warm water 1 cup evaporated milk

1/2 cup sugar 7 cups all purpose flour

1 pkg dry yeast 1/4 cup Crisco shortening

2 lightly beaten eggs 1 qt vegetable oil(cotton seed oil)

1 1/4 tsp salt

In a large bowl dissolve yeast in warm water, wait 10 minutes then add sugar, salt, eggs

and evaporated milk. Blend well, mix in 4 cups of flour and beat until smooth, Add shortening

and remaining 1cup evaporated milk. Mixture will expand. Meanwhile preheat oil in deep

fryer or electric skillet to 350°. Lightly flour surface; roll dough (1/8 inch thick) and cut into

2 1/2 squares. Fry in 350°. If beignets do not fluff right up, the oil is not hot enough. Fry until

golden brown and drain on paper towels. Shake powdered sugar onto hot beignet. Serve
