About the Recipe
1 c. soft butter 1 tsp. lemon zest
1 1/2 c. sugar 3 c. flour
1 tsp. lemon extract 1 tsp. baking soda
1 tsp. real lemon juice 1/4 tsp. salt
2 eggs 3 T. buttermilk
Preheat oven to 350°. Beat he butter on medium speed for 1 minute,
add the sugar, lemon juice and lemon extract. Beat until light and
fluffy. Add the eggs and lemon zest. Beat well. Stir together the
flour, baking soda and salt. Add to the beaten mixture alternating with
the buttermilk. Drop by rounded teaspoon onto a greased baking sheet.
Sprinkle with sugar and bake for 10 - 12 minutes. Makes about 45 cookies.
