About the Recipe
3 very ripe medium bananas 2 cups flour
1/4 cup canola oil 1 tsp baking soda
1 egg 1/4 tsp salt
1 egg white 1/2 cup semi sweet chocolate chips
1 tsp vanilla 1/2 cup chopped walnuts (optional)
1/2 cup brown sugar
Preheat oven to 375°. Coat 12 cup muffin pan with nonstick cooking spray.
In medium bowl, mash bananas and add oil, egg, egg white, vanilla and
brown sugar; stir well. In large bowl, whisk flour, baking soda and salt.
Pour in banana mixture; stir. Mix in chocolate chips and nuts. Spoon batter into
muffin cups, filling each two thirds full. Bake 25 minutes. Cool in muffin cups
5 minutes. Remove from cups and cool completely.
